Buy sushi grade albacore tuna

Albacore tuna, also known as shiro maguro (white tuna) by the Japanese, is an extremely versatile fish that is delightful as sashimi, but may also be smoked, grilled, or broiled. Not to be confused with super white tuna (escolar or butterfish), albacore tuna is heart healthy fish that is mild in flavor and less firm than yellowfin tuna. Some chefs prefer to make the meat seem firmer by searing the outside of the entire albacore fillet, and immediately immersing in cold water. This technique tightens the flesh and intensifies the flavor for albacore sushi fans who prefer a more steak-like texture.
